A twist on Anna’s Black Bean Fiesta Soup / Happy 101 Meme

What’s better than arriving home to a fresh cooked meal?

Nothing, really.

When I arrive home and Steven has a warm dinner on the stove, ready for me to eat, I feel like a pampered princess.

Do you like it when someone else cooks for you? Whose cooking is your favorite? Or do you prefer to make your own food?

Last night, Steven made a modified (because we were missing a few ingredients) version of Anna’s (newlywednewlyveg) Black Bean Fiesta Soup.

Here are the original ingredients, crossed out with what we substituted. Check out her site for the full recipe! I hope you don’t mind that we changed it up a bit, Anna!

  • 1 onion, chopped
  • 1 3 clove(s) garlic, chopped
  • 1 tsp. olive oil
  • 1 red bell pepper, chopped 1 1/2 T. Dried Red Pepper, 1 1/2 T. Dried Green Pepper
  • 1 4. oz. can green chilies, chopped 1 1/2 Tsp Dried Jalapeño
  • 1/8 tsp. cayenne pepper
  • 1/2 tsp. chili powder 1/4 tsp. Ancho Chili Powder and 1/4 tsp. Chipotle Chili Powder
  • 1 tsp. cumin
  • 1/8 tsp. turmeric
  • 1/2 tsp. salt
  • 1/2 tsp. lime zest
  • juice of one lime 1 Tsp. Lime Juice
  • 3 2 15. oz. cans black beans, drained and rinsed
  • ADDED: 1 15 oz. can pinto beans, drained and rinsed
  • 3 cups 2 cans vegetable broth
  • 1 15 oz. can corn
  • ADDED: 1 15 oz. can diced tomatoes

Also, our favorite cornbread made a guest appearance. It went deliciously with this soup! I recommend trying the soup (either the original or our version). It was so tasty – perfect for a cold evening, and not too spicy!

Crap. I better be careful. I don’t want to turn into a food blogger. Stop making such tasty eats Steven! (no really, please don’t stop)

How little exercise can you get away with? / 7 Random Things About Me meme

We all want to know – how much exercise do we really need each week? How little can we get away with?

There was an interesting (although VERY confusing) article on the Well blog covering this topic yesterday.  The article stemmed from a study done in Scotland that concluded you only need 20 minutes of exercise a week to increase your contentment. Okay, but how much do you need to be healthy?

That’s more difficult to define. The article went into a discussion about “MET” minutes, which are “Metabolic Equivalent of Task” minutes. Huh? Apparently  you need 500 of those as week, and they vary based on what you are doing for exercise and how intense it is. For example, running at 6 mph is a 10-MET activity. So if you run for 60 minutes, that is 600 MET minutes. So, you’re done for the week then? Confusing…

Has anyone heard of this MET mumbo-jumbo before? How do you decide how much to exercise a week? Do you have any exercise goals for 2010?

I aim for at least 30 minutes a day, but usually go by how I feel. If I am in the groove, I will keep going! If I feel like crap, I won’t work out at all.

A few other interesting points from the article (repetitive, but interesting):

According to the Physical Activity Guidelines report, “It has been estimated that people who are physically active for approximately seven hours a week have a 40 percent lower risk of dying early than those who are active for less than 30 minutes a week.”

Interestingly, they did not find that exercise beyond a certain point conferred significant additional health benefits. Instead, the “dose response” for exercise, the committee found, is “curvilinear.” In other words, people who are the least active to start with get the most health benefit from starting to exercise. People who already are fit don’t necessarily get a big additional health benefit from adding more workout time to their regimens.

You do not necessarily have to divide your exercise time into daily allotments, either. Existing “scientific evidence does not allow researchers to say, for example, whether the health benefits of 30 minutes on five days a week are any different from the health benefits of 50 minutes on three days a week,” according to the activity guidelines. Do what suits your schedule.

The “how lucky am I?!” moments

Yeah, this is going to come off as cheesy, but I have to get it out there.

I had a lot of  “how lucky am I?!” realizations this year. Without going into too much detail, I will just say that 2009 involved some changes in our financial situation, and I had a hard time adapting. Not that we were spendthrifts before… we weren’t. We just didn’t have to think twice about going out to the movies, to Subway, or where to buy groceries.

Now we rarely eat out, only see movies if we have a gift card, and do most of our shopping at a discount store.

And it’s no big deal.

But change is hard.

I am embarrassed at how long it took me to adapt to being more financially aware. And embarrassed at how long it took me to realize how lucky I am as it is.

I have a roof over my head. I can still afford to make payments on a luxury car. I don’t go hungry. I have a gym to use. I have a wii to play. We can still afford Netflix. We’re healthy. I can run!

And most importantly of all, I have wonderful people in my life. People who love me enough to come all the way out to the Chicago suburbs to see me. Friends who send me emails and snail mail. Blogger friends who actually read what I write and leave me wonderful and thoughtful comments!

And of course, my partners-in-crime – Steven and Data. I cannot even count how many times this year I have looked at my husband and thought, “How did I get so lucky? How is it that I ended up with him? How lucky am I that we ran into each other at that random party at college?” We have so much fun together. I think we help each other be a better person. We support each other. We let each other be themselves. We work through things the best we can. I just feel so lucky to have found a wonderful partner.

Yeah. I told you it was cheesy.

I don’t want to make resolutions, but this seems to be something I am thinking about a lot (last week too), so I’d like to work towards being more grateful and mindful in 2010. I want to live in the moment. No more looking forward. I need to be grateful for what is in front of me. What I already have. Aspirations and goals are great, but I need to keep in mind how lucky I already am.

Taking time to be grateful

Every time I’m about to hit “publish” on this rant post I have drafted out, I end up with some surprise I’d rather blog about. First it was from my mom, and then last week, I got a wonderful surprise almost every single day! I think this is a sign from the universe – save that rant-y post for January, Kim… have some holiday spirit

I received the first gift was from my blogger buddy Gina on Monday. I have been blogger buddies (well, we call each other blogger sisters) with Gina and Courtney for over three years. We write group emails almost every week, exchange holiday and birthday gifts and cards, and hope hope hope that the three of us can meet up someday (Gina is in New York and Courtney is in Texas).

Appropriately, Gina sent me Julie & Julia – the movie about Julia Childs and the blogger Julie Powell! I had not seen the movie, and I was so so excited when I opened it! She sent it along with vegan popcorn and a thoughtful card. How lucky I am to have a friend like that?! Steven and I really enjoyed watching the movie. It made me hungry though!

Then on Wednesday at work, one of my team members brought in holiday treats for us all. She was thoughtful enough to make me vegan gingersnaps!

On Thursday, I received Lindsay’s copy of The Reader, which she is loaning me. I sent her a book of mine to borrow, so we are doing a fun little exchange.

And then Friday a holiday package from Lauren arrived (we participated in Morning Runner’s blogger gift exchange). WOW. Lauren HOOKED ME UP! DUH! How could I have forgotten she works IN a running store???!!! She sent me Saucony socks, Adidas headbands, a “run” keychain, and some prickly pear cactus candies which I am super excited to try. Isn’t that the best gift ever?! I really got lucky in drawing Lauren’s name. I have been having a lot of fun getting to know her through her blog. I love how down to earth she is and the great attitude she has. Check her out if you don’t already read her blog!

On Saturday, there was yet another package, from Courtney, wrapped in adorable “Meowy Christmas” paper!

And inside of an adorable Santa tin! What could it be, Data and I wonder…

Homegrown pecans! WOW! I cannot imagine how long it took to shell all of those! What a thoughtful gift! Steven and I are thinking about using them to make baklava!

We also received a ton of holiday cards this week, many from thoughtful bloggers, along with those from family and friends. THANK YOU EVERYONE!!!

How lucky I am to have received all of this? Who am I to even consider ranting about the small things in life when I have such a wonderful network of supportive friends? I am so grateful for these relationships! And I am grateful for each and every one of you who take the time to leave comments and develop an online relationship with me. It really makes my day to read your insight and feedback to my ramblings! Thank you!!!

Damn you, winter snow storm. I was looking forward to running outside with Steven. No way that is happening in the slippery snow during a snow storm!

Steven and I both ran 4 miles on the treadmill (with one window open). I set it to 6.0 mph, but it feels so much harder than running that pace outside. This chart says that if you run at 6.0 mph at a 1% incline, it is more similar to running a 9:52 mile. Do you think that chart is correct? Do you find running on the treadmill easier or more difficult? I think the treadmills at office gym are easy, but I struggle at home!

Steven and I did Level 1 of The 30 Day Shred together. It was his first time doing it, so there was quite a bit of giggling from me in the beginning. It’s just funny to have two people doing jumping jacks in tandem in our living room! Plus, you have Data running around our feet, chasing a little ball while we are trying to do the moves. Steven actually felt like it was a good workout, so I hope we can do it together again!

My train home Thursday evening was stopped on the tracks for more than 45 minutes (due to a pedestrian accident ahead of us). Instead of being pissed off, I was grateful to have my baby computer to keep me entertained, decided to move my run to Friday (Steven got 4 miles in before I got home), and just walk 2 miles on the treadmill in the evening.

Day 54 | December 11, 2009: 3.5 m run + cross

I got pissed off on Friday.

I woke up at 4:00 so I could be to work by 6:30 – giving me a full hour and a half to stretch, warm-up, run, cool down, and take a shower and prep before work at 8:00.

My train was stopped on the tracks just past my stop for 40 minutes. I was so pissed. I could feel my blood boiling. When we finally got to the city, I speed-walked to my office (warm-up), ripped off my gym pants (thank heavens I was already dressed in my gym clothes) and tried to fit those 4 miles in. I got in 3.5. I was feeling great, but had to go poo since 2.9 and it hurt.

I hate when my schedule is out of my control like this. JUST. HATE. IT. I know it’s no one’s fault, but I get so frustrated. I worked very hard to calm down and think I did a good job. I still treated myself to a bonus lunchtime workout to de-stress though!

Side Note: The office treadmill is a piece of cake compared to ours at home!

Another day of The 30 Day Shred, Level 1. It’s getting pretty easy – time to move on, Kim.

Steven and I also walked 1 mile and ran for 1.5. We intended to run further but Steven had a sudden splitting headache and felt like he was going to throw up, so we quickly walked home. No big deal!

Day 56 | December 13, 2009: 6 m run + strength

I finally tried Level 2 of The 30 Day Shred. Whoa! I got through it, but definitely had to pause a few times to make sure I was doing it correctly. I did the “easier” versions of the Jumping Plank and the Plank Jacks. I thought the Walk-Out Pushups were a great move, even though it killed my wrists. Oh Jillian, you continue to surprise me with your torturous innovative workouts.

A few hours after The Shred I headed outside for an enjoyable 35° run – no joke, it’s the perfect temperature for me! (Steven decided to run on the treadmill).

I was hoping I would find clear sidewalks throughout the neighborhood, but I didn’t. There was definitely a bit of slippery snow running, so I did the last half of my run in the neighborhood park (it’s on asphalt), which was clear. I was kind of bored running without Steven, so I jammed to some tunes (one headphone only, of course)! I definitely played “Empire State of Mind” with Jay-Z and Alicia Keys more than once. What song are you jamming out to when exercising these days?

Week Summary: 18.00 miles

I enjoyed having a flexible schedule this week (except for Friday’s late train). I made a draft schedule, but modified it as I went along. It was fun to go with the flow and do what I felt like fitting in. I still set goals for each day, but was easier on myself about meeting them.

My legs have been feeling pretty tight for the past two weeks. It may be time to try and fit some yoga in.

Friday Question #92

Tell me all about your holiday gift-giving! To whom to you give gifts? Do you make them or buy them (in stores or online)? Do you have any gift-giving traditions? Do you participate in gift exchanges? Do you share a holiday wishlist with friends and family? Does all of this STRESS YOU OUT?!

We usually buy* gifts (in stores and online) for all of our immediate family and grandparents. But we are cutting back this year. In my family, my three siblings and the three significant others all drew names. Steven is buying a gift for my older brother’s wife and I am buying a gift for my younger brother’s girlfriend. Then, we are only buying gifts for our parents and Steven’s brother. I thought I would feel sad about this, but actually, I feel RELIEVED and not stressed at all. Instead of buying a lot of gifts, I get to focus on the one specific person whose name I drew! Edited to add: Steven and I exchange gifts every year, but have not decided if we will this year or not. Not because we don’t want to, but to save money.

And I am ALL ABOUT the wishlists. I created two separate wishlists this year for me and Steven – one for my family and one for his. And we asked for them in return, especially for the people whose names we drew! I know some people think having a wishlist means you don’t get to be creative, but I just think it means you know what the person actually wants. If I am spending money, I want to make sure it’s well spent.

I am participating in Morning Runner’s gift exchange. I got paired with RunningLaur and am sending her gift off today! Here’s a sneak peak, Lauren! You’ll have to guess if you are getting the gray item or the pink item.

*I do LOVE to make people’s favorite treats and give them to them as well.

Crystal Lake Thanksgiving Day 5K

You know it’s a good day for a 5K when you wake up and find SNOW on your car!

We didn’t let the snow/rain/cold temps (low 30s) deter us! I was super excited to be running our first Thanksgiving Day 5K – especially since the entry to this one was practically free! All you had to do was donate some food. And it looks like they got a lot of donations – I think there were at least 300 runners there.

For being an inexpensive race, I thought it was still well organized. They still had bibs, registration, the trail marked, and people helping along on the trail. There were no pace signs at the mile markers, or water stations, but that was fine with me.

The 5K was held in Lippold Park in Crystal Lake (about a 30 minute drive for us), on a crushed granite path. Crushed granite path + 3 days of rain + a little bit of snow + runners on crowded trails = SUPER SOAKED SHOES. A few times we stepped in puddles that went OVER our shoes and had the fun feeling of water squishing between our toes as we ran. No worries though, we brought extra socks and shoes (My idea of course. Even though I will probably never be a mom, I still think I have the mom instinct)!

Our goal was to get in under 30 minutes. I wasn’t sure if we would be able to because we were focusing so hard on not stepping into ALL of the puddles, but our final time was about 28:40! We even had negative splits. I never really felt like I was struggling, but doubt I could have gone much faster at the end.

Even though the race was crowded, muddy and cold, it was still a lot of fun. I’m so happy to be getting back into the game, and being able to run with Steven. It might be a silly goal, but I would like to work on my speed, as well as endurance this winter. Do you have any winter running or exercise goals?

When Grandma visits

Q: How do you prepare for a visit from Grandma?

A: By cleaning like a mad woman, of course!

Come on, it’s not every day you get to:

  • iron your place settings
  • discover shiny surfaces right there in your own home!
  • feel the tactile pleasure of cleaning each and every window blind
  • relive memories as you clean tiny little mementos on your knickknack shelf
  • vacuum every side of every cushion and pillow on the couch – I’ve confirmed – we do indeed, have a gray cat
  • scrub out Data’s litter box by hand – ha, not! gotcha

Truth be told, Steven and I are very neat and tidy (he is more than me, for all of those women who think men can’t be organized*), and we would be doing this type of deep cleaning for any holiday visitor, not just my grandma. It’s just so time consuming!

Do you do a deep clean before each guest arrives? Or do you leave your place “as is”?

We always clean quite a bit for guests, but extra for the holidays.

At least we got to do some fun things, like put up the holiday decorations and listen to music while we were cleaning.

Data loves the fake tree, but we’ve asked him to admire it from a distance. It has valuable Star Wars ornaments on it after all!

Data! I see you there!

Photo Story Saturday

The Pharaoh

It’s too soon after posting these pictures, BUT I had been eying this Pharaoh hat at Target for two months. Imagine my delight when I saw it in the Halloween clearance section last week for 75%  off ($1.25 total – not sure if it’s even worth that!).

Doesn’t it look great on Data?! He didn’t like it so much. I had to bribe him with food to wear it so I could take a picture. (I think he deserves it after trying to wake me up for 3 hours this morning.)

Killer House Plants

We have a lot of house plants in our lower level – seven of them! Two of them, somehow from across the room, decided to band together and grow super stinky, killing flower pod things (not yet bloomed) this past week. I am convinced they are trying to take over the house.

Both plants are corn plants. We have had one for at least 8 years, and the other for maybe 3. It’s curious that they are blooming now, when they never had before! I’ll let you know what they look like when they open (I imagine there will be little daggers in there, which the plants will use to attach us in our sleep).

Nutritional Yeast Fail

Why is my pasta naked, sad and lonely?

Because it is supposed to have this on it:

A Nutritional Yeast based pasta sauce.

But one bite of that made me want to throw up. Steven tried to fix it with spices and he couldn’t.

Most of the vegan websites I read talk about using nutritional yeast to make a pseudo mac n’cheese dish. I was intrigued so I bought some and was really excited to try it. I tried this recipe from vegweb.

I don’t know if nutritional yeast is a very acquired taste, or if my stomach was just too upset after my run, but this sauce made me feel nauseous, and I lost my appetite. I am hoping I just did something wrong, or it was the wrong recipe, because I have read SO MANY raves for this product!

I felt really bad for “ruining” dinner. I am pretty sensitive in the kitchen, since I am not a very good chef. I need lots of praise and good feedback to keep me going (ha ha). Luckily, Steven was not upset about it. But I think we will be making something “safer” for dinner tonight!

Wow Data, you’re really helping paint the guest bedroom.

Not.

Why can’t you be more helpful like last year?

We’ve been painting the final two rooms (the guest bathroom and bedroom) in our house this weekend and last weekend. It doesn’t suck as much as last year, but ugh. It’s not on my top ten list of fun things to do!

Data loves to run into the room and dive into the plastic sheets. Maybe we should just leave them up in a room for him all year long!
