Pocket Pies!

Why the exclamation point (especially since I didn’t know what a “pocket pie” was before Wednesday)? Because these are awesome!

Gina* sent me an awesome package for my birthday – three pocket pie molds (lattice, star and apple) and pocket pie filling from Williams Sonoma!

I had never seen these before, but knew that I would love using them. I love baking fun things in the kitchen.

And they’re actually quite simple to make – make dough, cool it, make pies and fill, freeze, and bake! Of course, it will take me some time to perfect their appearance.

Cutting out the shapes is fun. The cutters are double-sided, so you use one side to cut it…

… and the other side to hold it while you fill it up!

When it’s all full, you put the other piece on top and crimp it.

Voila!

Like I said, I have to work on the appearance a bit. Even after making one, I realized I needed to make the dough thinner, and put flour in the cutter so it was easier to get the pie out.

You freeze them a bit…

… then you bake them. Yum-o!

What other type of filling do you think I should try besides peach? Keep in mind, they could be sweet or savory!

*It’s worth noting that I have never met Gina in person, but have known her, and our friend Courtney, online for over 4 years, and the three of us have been sending weekly emails and gifts back and forth since we met. It’s amazing that you can meet such awesome people online. AND I finally get to meet Gina in person this week!!!!!!!!!!!!!!!!!!!!!!!!!!!!! Now ifย  only Courtney could be there too!

    I’m a cherry person myself. A lot of Canadians love strawberry rhubarb pie, but that probably tastes better fresh than from a jar.

    One other suggestion could be mincemeat, since they are small. Sort of like mincemeat tarts.:)

    Those pies are so so cute (especially the apple)! And if you used a pot-pie kind of filling (carrots, peas, potatoes and gravy) I bet it would be delicious!

  6. Those are too cute!! To me, they look like they’re begging for a raspberry filling, but that’s just the traditionalist in me comparing them to linzer tarts. ๐Ÿ˜‰

    That’s an awesome little set! I have never really been a fan of pie or cake, but don’t put brownies or cookies anywhere near me! Still, I was kinda thinking you could do a berry mixture. I bet that would be ooey-gooey with the crust.

    AHHH! I love small things, so pocket pies have instantly shot up to the top of my “I WANT THIS” list!

    Hmm, a good filling? Raspberry? And for savory? Maybe some kind of lentil thing?

    YUM! I’m not a huge fan of fruit pies outside of apple, but I’m imagining something cheesecake-ish. Or maybe a cream cheese, chive mix. Delicious!

  10. How awesome is that! I love it. I don’t love pie and I didn’t even used to like it at all. It is growing on me though and now sometimes I even consider making it for no reason like I do with cookies and cakes.

  12. I think you did a great job! They look soooo good! Ok, def gonna head out and by one or two of the pocket pie thingys for me! Someone mentioned raspberry – drool! Maybe you could make some kind of chocolate pie. For savory, maybe a broccoli cheese kinda thing? So glad you like them!

    Filling: Strawberry, vegan ‘chickn pot pie’, pumpkin (in the middle of summer….)

    How cute! they look awesome to me – I wouldn’t change a thing! Thanks for your well-wishes for my dad, too. Yes, I will be going to florida in November and hope he will be able to come to my sister’s for Thanksgiving that week too. Otherwise I think we will also go to Texas for Christmas with the whole family.

    I’ve seen these in the store and they look so cute! I think a raspberry filling would be delicious….or chocolate. I definitely opt for the sweet stuff. ๐Ÿ™‚

    You can do strawberry or a mixed berry pie. As for savory, spinach with feta that would be so delish.

    I actually went to a Williams Sonoma class and we made the apple pocket pies! They are so good! I loved the pumpkin filling they used (i think…) it was last fall when I went so I can’t remember exactly.
