Fettuccine Fauxfredo
It’s been awhile since I posted a custom recipe from Steven! It’s not that he hasn’t been creating in the kitchen. It’s that I’ve been lazy. Oops! Well, this latest recipe is too good not to share!
I’ve been doing the vegan thing for about 2.5 years, and if I had to make a list of foods I miss eating now that I am vegan it would be very short… but Fettuccine Alfredo would be on the top of the list! Yum, how I loved to get a dish of creamy Fettuccine Alfredo, devour it all and feel sick to my stomach later.

A few weeks ago, Steven whipped up a quick vegan Alfredo sauce. We were both amazed at how simple, yet tasty it was. He tweaked it just a little bit, and now we have Fettuccine Fauxfredo!
Fettuccine Fauxfredo (makes 8 servings)
Ingredients:
- 2 c broth
- 1 c soy milk
- 4 tsp nutritional yeast
- 1 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 2 tbsp margarine
- 1/8-1/4 tsp salt (to taste)
- 2 – 2 1/2 tbsp cornstarch (until desired thickness is achieved)
- 1/4 c cold water
- 1 box Fettuccine noodles
- In a medium pot, combine the broth, soy milk, nutritional yeast, garlic powder, onion powder, and half of the margarine. Heat to a simmer.
- Season to taste with salt.
- In a small bowl, combine cornstarch and cold water, and stir it together.
- Add the cornstarch mixture to the simmering sauce, and stir until thick (1-2 minutes). If necessary, add more cornstarch/water mixture to achieve desired thickness.
- Coat cooked pasta with remaining half of margarine.
- Add sauce to pasta, and toss.
- Devour.
And Data even came by to say hi.
In fact… Data sat on the table for much of the last hour of the call being a grumpypuss. He did not like that we were on the computer for so long! He kept getting on the counters and fridge. He had a time out and attacked Steven when he left time out. Later that night (after the call) he chewed a hole through a comforter, then spent the night chewing on his stocking while we were sleeping. I don’t think Santa is going to be leaving anything for Data (which is a shame because I think Santa had two gifts for Data)!
Sigh. I hope Data is not turning in to one of those old grumpy cats. He’s only 9ish!
I’m not a huge fan of alfredo but I do enjoy it occasionally. My favorite italian dish is spaghetti and meatballs in red sauce. Yum!
Funny that you mentioned how Data has been acting out lately. Delilah has been doing the same thing!! She has been SO bad lately that I’ve been meaning to blog it but I haven’t taken the pictures I want to use to show her badness. *sigh*. I hope Delilah isn’t getting cranky in her old age too! She’s only 5!!!
Mosie is the same way – jumps on the table or the counters or the mantle when she’s mad and wants attention!
This recipe sounds good… I wonder if it would work with milk and butter instead of soy milk and margarine? Either way it sounds and looks delish!
Oh yeah, I am sure those substitutes will work!
Yummmy! I wish I had some more fauxfredo! I should have brought it for lunch, dammit! Tomorrow. It’s a really yummy recipe and I will def try it again.

That does look really good. Jason likes to make fettucini alfredo but he just uses sauce from a jar. We mix in the broccoli and the chicken because most things taste better when you coat them in the sauce 🙂

Uh-oh, sounds like Data wanted more attention than he was getting. Our dogs have been acting out during the day when it’s just me and the baby because I can’t play with them as much as I used to.
Yeah, it’s all about the attention 🙁 I am going to try to take him on some more walks this week since it’s so nice out.
That looks seriously yummy. I looks way healthier than traditional alfredo – might have to give it a try!
Your fauxfredo looks really good!! Y’alls dinner dates look like a whole lot of fun!!!! Poor Data!!! I bet he was jealous that he wasn’t invited to the dinner date! I hope he’s not turning into a grumpypuss!! I hope he shapes up so Santa Claws doesn’t leave him any coal!!

Like cole slaw, I am a Fettuccine Alfredo snob. There are only two places I’ve been in the last 10 years that have had the best Fettuccine Alfredo I’ve ever had. Alfredo’s in NYC near Rockefeller Center (Nov. 2006) and Angelo’s in Myrtle Beach, SC (May 2011). Both were soooo good. I have copied this recipe and sent it to a friend of my wife’s who is vegan and did raw for a while. I might have to try it, too.
I am going to add that place to my NYC list to visit when we are there! I am surprised you did not try anything in Little Italy 🙂
And I would love to hear if your wife’s friend tries the recipe! 🙂
